The Beginning – 2019

Woodfired Grill Company was Founded in early 2019 with a few key points in mind. Firstly and foremost lets be honest, Food. Nothing beats great food. Secondly has to be fire.  Fire is at the core of all our souls and needs a place in all our lives. Thirdly, a deep passion for building things. I have noticed in South Africa we have this diversion from fabrication, nobody wants to do it. Everyone wants to be the middle man and just take a cut. Its very upsetting to me and I really want to try and change this in South Africa. Finally, well we all need to make a living don’t we?

My first workshop was an old chapel in Maitland, Cape Town. As you can see not much more than a wooden door and a dream.

Wood Fired Grill Chutney

WOOD FIRED GRILL CHUTNEY

This Chutney will constitute the base for many of our Sweet & Tangy Sauce range including our BBQ & Lamb Grill Sauce. I’m a firm believer that we should all learn how to cook the right way from the beginning. 

Ingredients

  • 500 g dried peaches
  • 250 g dried apricots
  • 3 litres brown wine vinegar
  • 2½ kg sugar
  • 500 g onions
  • 120 g salt 
  • 7.5 g cayenne pepper
  • Chilli to taste

Instructions

Soak the dried fruit in 2 litres of vinegar overnight and then cook until they are soft.

Remove the fruit and mince it or food process it.

Place left over soaking and the further 1 litre of vinegar and fruit in a pot.

Add sugar, grated onions, chilli and spices.

Add more vinegar if it is too thick.

Cook for 1 – 2 hours, stirring occasionally to prevent it ‘catching’ on the bottom.

Pour into sterilised jars and seal.

How To Use A Wood Fired Grill

I had an interesting experience last night as I paid a visit to Greek Street in Hout Bay. I had recently installed our Wood Fired Grill there named “Athena”. On arrival early in the morning, I was told that the Grill was not cooking fast enough and it was too hot to even stand next to it. I had to see this for myself. So I stuck around for service that night and set up the grill for the nights service.  I now see what they were doing and realise I may need to add a few pointers on how to use the Grill.  

Firstly, might I add Our Grills are not BBQ’s. Yes, its a similar concept however the cooking style is very different. 

The main difference between Wood Fired Grills and a BBQ is that you cook on the flame itself. So you do want to achieve a coal bed but the flames are where it works best. You will never get the heat you are looking for without the flames. This gives a very distinctive charred flavor that only flame cooking can achieve. “But how does it not burn?” you may ask. Well that comes down to our Patent Pending Grid System. You drop the Grids down onto the flames and you will see only little jets of flames coming through. These are the perfect cooking medium. As seen in the video below.

 

This gives you a hot Grid for your sear as well as a flame char that is oh so good. Above all this means its perfect for quick start-up and go. Fire cooking with no waiting for the coals to settle like a normal BBQ. As the flames die down you can just chuck on a log or two under the grid which will bring the flames back. A handful of smoking chips onto the coal bed will also do the trick and add a little something special to the meat. “But it will smoke?” you may say. Yes and a little bit of smoke is exactly what you want for that real grill flavor.

  • The “V” Grid will protect your meat
  • The coal bed does not need to be too big but it does need to ignite the logs quickly
  • Use dry wood to ignite quickly and on demand cooking heat
  • Throw in some flavorsome wood chips for that extra kick

They offer great quality products as well as off the shelf units (if you are lucky). Greek Street Grill

Our Greek Street Grill was installed in Hout Bay earlier this week. Her Name is “Athena”. Our very own Greek goddess of wisdom, handicraft and warfare. We fitted so much onto this Grill with Double Stack Grids, Souvlaki Stand and to top it all off a 4 Bar Rotisserie. As a result she is a wonder to behold. The Rotisserie is a clip on clip off system that can be exchanged for a Grid. As Always this Grill Is made from 304 Stainless Steel with Billet Aluminium Machined Wheels and Phosphor Bronze Bushes.  To be honest this has been one of my favorite builds thus far. Possibly due to the new features I have needed to design and make this Grill or maybe the lovely people I have met along the way.
